When you think of Meatless Monday, what’s one word that comes to mind?: Future.

Tell us about something going on in your country or city addressing meat reduction: In Chile, there is growing awareness about how food choices impact the environment, especially because Chile is a country that is very vulnerable to climate change. There is still a long way to go, however, the movement towards meat reduction is growing. This has led to an increase in the number of plant-based options available in the market, supermarkets and in large fast food chains.

If you could give one piece of advice or an easy step people could take to reduce their meat consumption, what would it be?: 

I would advise people looking to reduce their meat consumption to look online for a plant-based version of your favorite dish, so you can see how easy it is to make delicious plant-based meals. Itt doesn’t have to be a sacrifice or a big change to your daily routine.

What’s your favorite plant-based dish?: 

My favorite plant-based recipe is Tofu Scramble, because it is delicious and versatile. It can be eaten as the main protein for lunch, or with some toast for breakfast, and the recipe is very simple and easy to prepare.

Scrambled Tofu

Ingredients: 

  • 1 tbsp olive oil or vegetable oil

  • 454g (16oz) block medium-firm or firm tofu 

  • 1 tsp black salt, also called kala namak (or regular salt)

  • ½ tbsp turmeric powder

Directions:

  1. Chop the tofu and use a fork to crumble into bite sized pieces. 

  2. Heat some oil in a pan and add tofu and remaining ingredients. Stir and cook over medium-high heat for 5-10 minutes.

  3. Serve immediately over toast. Enjoy!
